This cold fighting soup is full of lovely things to help fight off a flu, a cold or is just perfect for those winter nights we’re anticipating. It’s perfect for the whole family and tastes really yummy. I always get addi to eat lots of orange veggies when he has a cold as they’re high in Vitamin A and beta-carotene. These both help with fighting off free radicals and boosts the immune system.
I don’t put any salt in this soup because of Addi but you can add it in later if you like. Enjoy!
Ingredients:
1 medium sweet potato, peeled and chopped
6 medium carrots, chopped (keep the skin on for extra goodness)
1 small onion, chopped
1 Apple, peeled and chopped
2 garlic cloves, minced
2 tbsp fresh ginger, grated
4 cups vegetable stock (I made my own but can use salt reduced cubes)
1 tbsp fresh turmeric, grated
Pinch of cinnamon
Method:
In a saucepan on medium heat, sauté the onion, ginger, garlic and tumeric in about a tbsp of coconut or olive oil. Sauté till the onion is clear. Add in the apple, sweet potato and carrots and cook for a 3-4 mins. If the pan gets too dry just add a little bit of the stock. After a few mins, add in all the stock, turn down the stove to low and let the soup simmer for 25-30 mins or until veggies are soft.
Then in two batches, put half the mixture into a blender with the cinnamon and blend till all smooth and creamy. Make sure to allow steam to escape through the lid.
Once both batches are done mix together and allow to cool a little before serving.
