Tuna Patties

Hey guys. I’ve been so MIA lately that I haven’t uploaded any new recipes or anything. I haven’t really been creating either. But I DID come up with these little babies for a lunch snack for addi and I found myself eating most of them. They are super delicious. Good source of carbs and protein for the little ones and also a great pre or post workout snack!

300g of sustainable tuna in olive oil (drained) 

1 & 1/2 Cups of brown rice (can use white) 
2 organic eggs

3/4 tsp curry powder 

2 tbs parsley, chopped

1 small onion, finely chopped (Or use 2 Tbsp of chopped chives for delicate tummies that don’t like onion) 

1 Cup breadcrumbs (I make my own by putting two pieces of toast in my food processor) 

1/2 tsp garlic powder 

1/4 Cup Parmesan (can use more if desired, or alternatively use 2 Tbsp of nutritional yeast for dairy free)

Squeeze of lemon juice 

Just chuck it all in a bowl, mix is up and smooth them into little flat circles. 

Heat up a pan with a few tbsp of coconut oil. Enough to cover the base of the pan. 

Fry the patties till crunchy and golden brown on both sides and repeat for all of them.
