Peanut Butter Fudge Cups

Hey guys! It’s been a while since I’ve done a post so I apologise!! Things have been hectic at home and if you follow me on IG I’m sure you would have seen I’ve been away in QLD for a few weeks. I haven’t had a chance to create new recipes and I’ve lost a little bit of motivation.. as the best of us do at times. So this is one of my old and probably my (and my friends) favourite recipes. If you like peanut butter cups… you HAVE to try these. They’re pretty special. They aren’t exactly your average PB cups. They’re all fudgey inside and extremely delicious. The hardest part is not eating the mixture before you put it in the freezer.. and putting them together haha. You can use big baking cups or small ones like I have here.

The Yummy Stuff:

Chocolate:

1/2 C Coconut oil (the stronger flavour the better)

4 Tbs Raw cacao powder

2 Tbs Rice malt syrup

1 Tbs Maple syrup (or just 3 Tbs of rice malt)

1 Tsp Vanilla essence

 

Peanut Butter Fudge:

2 Tbs Peanut butter

1 Tbs Shredded coconut

2 Tbs Coconut cream

1 Tbs Almond butter

6 Dates (soaked for 10 minutes)

Small pinch of Himalayan salt

 

Whatcha gotta do:

Melt the coconut oil, rice malt syrup and maple syrup in a small saucepan over low heat, then whisk in the cacao powder and vanilla essence till just combined with no lumps. Take off the heat. Spoon the chocolate mixture into the cups till they fill 1/3 of the cup. You will use about half the chocolate mixture. Put the rest to the side and freeze the cups for about 15 mins while you make your PB fudge.

For the fudge, add all the ingredients into a food processor and blend it until its very smooth and creamy. Take the cups out of the fridge and very carefully spoon this paste ontop of the chocolate and try to spread it out as much as possible. If its too thick (depending on what PB you use) you can add a bit more coconut cream to make it runnier. Leave a bit of room ontop for the chocolate and then cover the fudge paste with the rest of the chocolate to the top. Put back in the freezer for 1-2 hours and then consume responsibly!! I doubt you will though 😉
