Vanilla, Coconut and Goji Protein Balls

I came home from my run the other afternoon and had nothing to snack on and really didn’t want a protein shake. So I whipped these up with my old vanilla protein powder that’s suuuuuper yum.
You can use any vanilla protein powder for these as long as the powder tastes good haha. You can make these without the protein as well just as a snack for you and loved ones to share.
Enjoy!

The stuff:
1/2 Cup almonds
1/4 Cup hazelnuts
1/4 Cup pepitas
1/4 Cup buckinis
1/4 Cup oats
2 tsp vanilla paste
1/2 Cup shredded coconut
3 tbs goji berries
1 tbs dried cranberries
1 tsp lucuma powder
1 tsp chia seeds
1 tbs coconut oil
1/2 tsp cinnamon
10 soft dates
3 tbs vanilla protein powder

Method:
Literally just chuck all the ingredients into a food processor and blend till it becomes a sticky mixture. Roll into balls and set in the fridge for an hour. Ta daaaaaa.
