Hey guys! So this week has been hectic.. So much to plan (Addi’s first birthday) and today was the last day I had to relax till next Tuesday. So I watched a whole season of Friends and made this amaaaazing granola. I have no idea how I came up with this idea. I think because I made a cake with a healthy caramel the other day and was like.. *DING* This would be amazing on granola!
I had no idea if it would turn out at all. I was a little worried I must admit, coz then it would have been a huge waste of ingredients. But lucky for you all (and my belly) it worked out even better than I imagined. What you’re left with is a toffee caramel like chunky granola, almost clusters because it all just sticks together and you have to break it up with your hands.
I know I alllllways say this but this is is a seriously seriously addictive recipe. It’s not AS healthy as my chocolate granola, but it’s definitely still way healthier the store bought crap and it makes the best treat. For breakfast, for after dinner, for a snack. Literally any time.
So I hope you all enjoy this not so naughty- but tastes really naughty treat.
Granola:
3 Cups gluten free rolled oats
1 Cup buckwheat groats
1 1/2 Cups coconut flakes
1 Cup Nuts, roughly chopped (I used pecans, almonds, cashews and macadamias which I highly recommend)
1/4 Cup chia seeds
1/2 Cup pepitas
1/4 Cup dried cranberries
1/4 tsp sea salt
1/4 Cup coconut sugar
1/2 tsp cinnamon
1/4 tsp maca powder
Caramel:
1/2 Cup maple syrup
3/4 Cup rice malt syrup
1 Cup coconut cream
Preheat oven to 180 degrees.
Combine all the granola ingredients in a big bowl and mix well. Put to the side.
Then combine caramel ingredients in a saucepan over high heat. Let the caramel boil and then turn the heat down to low and let it simmer and thicken for 6-10 mins. Keep an eye on it. Once a little thicker, pour it over the granola ingredients and stir to combine and coat all of the granola.
Then pour the granola mix onto two large baking trays lined with baking paper. Spread out evenly but keep it all tight by pushing it down with a spatula. Pop in the oven for 15-20 mins, the outsides will start turning brown. After 20 mins, start flipping it in chunks. Put back in the oven for another 10 mins, flipping and stirring every few minutes to make sure none of it burns. The mixture, even though brown, will still seem quite wet and sticky. Don’t worry about what.. Once it cools it hardens up.
Take out of the oven and let it cool on the bench for 10 mins. Then come back and break into big clusters! And don’t eat it all and make yourself sick like I did haha.
