These babies came from just a random craving. I was originally going to make bounty bites but after I had made the mixture I thought it would be better as a slice. And voilà!
A few people have made these now and think they’re fantastic.
Not to blow my own horn but these reallllly hit the spot. Especially if you love coconut like me.
Here it is!
Coconut Centre:
2 1/2 Cups shredded coconut
1 Tbsp maple syrup
2 1/2 Tbsp rice malt syrup
2 Tbsp almond milk
Chocolate Layer:
3 Tbsp soft coconut oil
2 Tbsp rice malt syrup
1 1/2 Tbsp cacao powder
1/2 Tbsp almond butter
Method:
Mix all the ingredients for the coconut centre in a food processor till it becomes a sticky mixture.
Press the mixture into the bottom of a baking paper lines pan. This should be around 2cm thick.
Put in the freezer for half an hour
Then mix all the chocolate ingredients in a small bowl and mash with a fork till it comes a smooth paste. If you like you can melt all the ingredients over a low heat saucepan but the chocolate won’t turn out as soft.
Then apply this paste ontop of the frozen coconut mixture and put back in the freezer for half an hour.
Then slice up and enjoy.
I’ve kept mine in the freezer so I’m not sure what it’s like when you keep it out. But oh mannnnnnnn no matter what, it’s fantastic!
*Just a little note: Smoothing out the chocolate paste can be a bit tedious as it won’t stick to the coconut straight away, but be patient and take care.
