This one is for all you mums out there that sometimes are stuck for meal ideas ect. It happens to the best of us. These pikelets are filled with lots of veggies and other bits and pieces that are amazing for their growing bodies.
When I started feeding Addi food, I found a recipe similar to this one and over the last few months have changed it around a bit to cater for his taste. He absolutely loves these with some avocado on top or some pumpkin purée.
This makes quite a big batch and they’re really good to freeze ect. So try them out and see how you go 🙂
I always recommend buying organic produce, especially for your babies, but if you can’t get your hands on organic then that’s fine.
Btw.. Parents, I can guarantee you won’t want to eat these haha. For some reason babes loves them but let’s just say they aren’t as palatable for us adults.
1/2 Cup buckwheat flour
1/4 Cup brown rice flour
1/4 Cup arrowroot
1/2 Cup coconut milk
1/2 Cup rice milk
2 Tsp coconut yoghurt or kefir milk
1 Egg (or 1 tbsp flax meal w/ 3 tbsp water, left for 10 mins to gel)
1 Tsp dulse flakes
1 Tbs coconut oil, melted
2 Cups mixed veggies (I use zuchinni, carrot, pumpkin & broccoli), grated
1 Tbsp fresh basil & parsley, chopped
3/4 Tsp baking powder
Cracked pepper to taste
Combine the flours, arrowroot, milk and yoghurt in a bowl and leave to soak overnight.
*If you don’t have time to do this then that’s fine, just soaking makes them more easily digestible for the babes.
Next morning, whisk together the dulse flakes, egg or flax and coconut oil together. Add this to the flour mixture along with the veggies and herbs. Mix together and then sift in the baking powder and gently stir.
Put some coconut oil in a medium heat pan and cook 2 tbsp of the mixture for 1-2 minutes or until golden on the bottom. Then flip over and repeat.
Let them cool and top it with whatever your little one likes!
