Today was a beautiful 21 degrees in melbourne .. So we packed our lunch, put on some shorts (shock horror, shorts, in melbourne, in september!), packed a rug and went down to the gardens close to us and had a little picnic.
We could have packed cheese, dips and bread ect. But you know how summer just makes you want to eat salads and juice and fruit? Well we pretended it was summer today.
This salad was a bit of a fluke, and ended up being soooo yummy. My best friend is a vegan so I took some boiled eggs and tuna on the side for me.
I promise everyone will like this salad. The ingredients look a bit odd together.. but somehow it all works and goes fantastically together. And I mean, we could all do with another salad recipe in our life right? They can be so boring! Hope you enjoy guys 🙂

Ps. I didn’t measure any of the ingredients so I’ll try give you a rough guideline.
Kale and Quinoa Superfood Salad:
3 handfuls of Spinach
2 handfuls of Kale, chopped finely
5 Stalks of Broccoli (steamed), cut in halves
3/4 cup cooked Red quinoa (I cooked mine in coconut milk)
1 Cob of corn, steamed and kernals cut off (you could also char the corn which would be amazing)
2 tbsp Goji berries
1/2 an Avocado, chopped
1 Small carrot, grated
1/4 Spanish onion, finely chopped
1/4 Red capsicum, chopped
Mix all ingredients in a big salad bowl.
4 tbsp olive oil
1/4 tsp cumin powder
1 tsp dijon mustard
Salt and Pepper to taste
Juice of one lime
Combine all ingredients except lime juice. Pour dressing over salad and then squeeze the Lime over the top.
If you like/ eat dairy, you could grate a little Pecorino over the top.
