This granola is a staple at my house! Its so easy to make and its not filled with sugar like all the store bought granolas. Plus I think it tastes better.. but I might be a bit bias haha. I have this on top of my oats in the morning or I have jars to snack on in my pantry. Seriously.. its a addictive. Trust me.
This recipe makes quite a lot, but it will be gone in no time!
I usually find myself making this over doing other important things like, say, cleaning, laundry, taking a shower even. You can tell what my top priorities are ha.
Chunky Chocolatey Granola:
3 Cups gluten free rolled oats
1 Cup buckwheat groats
1 1/2 Cups coconut flakes
1 Cup Hazelnuts/ Walnuts/ Pecans (Whatever ones you like best)
1/4 Cup chia seeds
1/2 Cup pepitas
1/4 Cup dried cranberries
1/2 tsp sea salt
1/4 Cup coconut sugar
1/2 tsp cinnamon
1/4 tsp ginger powder
1/2 Cup Rice malt syrup/ maple syrup
1/2 Cup coconut oil (the more coconutty taste the better)
1 tsp vanilla extract
3/4 Cup cacao powder
Preheat oven to 180.
In a large bowl, combine the oats, buckwheat, nuts, coconut flakes, chia seeds, coconut sugar, pepitas, cranberries, cinnamon and ginger powder.
In a small saucepan over low heat, melt the coconut oil, then add the salt, vanilla extract, rice malt/ maple syrup and cacao powder. Whisk until all smooth.
Pour chocolate sauce in to the oats mixture and mix to combine. It will be all sticky but crumbly.
On a large tray with baking paper, spread mixture out evenly and press firmly with the back of a spatula to ensure the mixture is compact. Bake for 15-20 minutes. Then remove from the oven and flip it over in large chunks and place back in the oven for 10 minutes. Keep an eye on it though because it can burn quite quickly and its hard to tell because its covered in chocolate! Check on it every few minutes. You’ll be able to tell by tasting one of the nuts as they will be all yummy and roasted.
Then let it cool and store!
