Hey guys! Ive been meaning to start this blog for ages now so I thought, theres no better way to start something than with food! So heres a little recipe I came up with.. I took a few recipes I found and kind of mixed them all together. And oh boy was the outcome good!
I make these in a blender because its so much easier. But feel free to mix them by hand if you don’t own a blender.
These are so super naughty tasting but SO good for you. I promise, if you give someone one of these, they wont be able to tell the they’re healthy 😉 So sneaky haha.Treats can be good for you as well.
I reccomend using organic products as I will with all my recipes, but I understand not all of us have access to organic products. Either way.. they’re gonna be yummy 🙂
Dark Choc & Cherry Flourless Muffins
2 1/3 cups cooked quinoa (remember to rinse quinoa before you cook it, otherwise has a funny taste and also goes mushy)
1 cup coconut sugar
1 cup cacao powder
1/2 cup dark choc chips (I use vegan ones or raw dark choc chopped up)
1/2 cup dried cherries (you can also add any other dried fruits)
1 cup raw beetroot, grated
3/4 cup organic butter, melted (can use coconut oil but muffins will be more dense)
1/3 cup coconut milk/ almond milk/ hazelnut milk ect
1 tbsp chia seeds
1 1/2 tspn baking powder
1/2 tspn himalayan salt
1 tspn vanilla essence
Preheat ove to 180C. Line a 12 hole muffin tin with baking paper
Combine coconut milk, eggs and vanilla in a blender. Add butter, beetroot, cooled cooked quinoa, chia seeds, salt, baking powder, coconut sugar and cacao powder and blend until combined. Stir through the sour cherries and dark chocolate chips.
Divide mixture into the muffin tin and bake in the centre of the oven for 30 mins or until a skewer comes out clean. Make sure you check on them though to see if the tops are burning.
If they are, put a piece of baking paper over the top.
Remove and wait to cool before putting them on a wire rack.
These also freeze exceptionally well.
